These incredible Boysenberry Chocolate Chip Cookies have that dreamy crispy cookie crust on the outside and is that tender melt in your mouth texture on the inside!

I use a Boysenberry jelly for this recipe, I have purchased mine but if you are able to whip up a batch yourself then use that! I might even create one for my family and Stripes & Willows!

Ingredients

Boysenberry Cookies with Chocolate Chips
  • 1 1/2 cups plain white flour
  • 1 1/2 teaspoon baking powder
  • 1/2 cup caster sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup boysenberry jelly
  • 1 cup dark chocolate chips

Instructions

Boysenberry Cookies with Chocolate Chips
  1. Preheat oven to 355 degrees F fan bake.
  2. In a large bowl sift flour and baking powder together.
  3. In a separate medium size bowl cream the butter, sugar and vanilla extract for 1 - 2 minutes. Whisk in egg and boysenberry jelly.
  4. Add wet ingredients to dry ingredients and stir until just combined. Then fold in chocolate chips.
  5. Line a baking tray with baking paper. Using a ice cream serve (if you have one otherwise tablespoon works fine!) portion up the boysenberry chocolate chip cookie dough.
  6. Bake for 13 - 16 minutes depending on your oven or until cracking and golden on top. Remove from oven.
  7. Enjoy! x
