Chicken Waldorf Salad
This is a quick and delicious twist on a classic Chicken Waldorf Salad!
I make this salad during the week for lunch, my family loves it and it’s a nice change as we are all working/schooling from home due to lockdown.
My family eats this in low GI rolls but eat most meals gluten free. I have my salad on top of cos lettuce or any greens I can find in the fridge. It would also be great on top of roast potato or kumera if you want that carb hit!
I use left over roast chicken or grab a cooked rotisserie chicken from the supermarket. Whatever is easiest!
Chicken Waldorf Salad
Salad
2 cups cooked chicken shredded
3/4 cups chopped celery
Dressing
3/4 cup sour cream
Zest & juice of 1 lemon
1 tablespoon white wine vinegar
1/2 teaspoon smoked paprika
1 tablespoon nutritional yeast flakes
Small handful chopped flat leaf parsley
Salt & pepper to taste S&P
Directions
Place sour cream, lemon zest & juice, vinegar, paprika, nutritional yeast flakes, parsley, and S&P into a medium bowl. Whisk all ingredients until you have a smooth consistency with no lumps from the sour cream.
Add shredded chicken and celery into the bowl with dressing. Stir all ingredients until all your chicken is coated with the dressing.
Serve in low GI rolls or if you prefer the gluten free option, place on a bed of cos lettuce or whatever greens you have in the fridge. x
