Chocolate Chip Macadamia Cookies
Makes approximately 16 - 20 cookies
1 cup / 225 grams butter softened
1/4 cup white granulated sugar
1/2 cup soft brown sugar (firmly packed)
1 teaspoon vanilla essence
1 egg
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
Pinch salt
1/2 cup chocolate chips
1/2 cup macadamia nuts
Directions
Preheat oven to 355 degrees F / 180 degrees C fan bake. Line a baking tray with baking paper.
In a medium non-stick fry pan on a medium heat toss in your macadamia nuts. Keep moving the buts around the pan whilst toasting them for 3 - 5 minutes. Once golden and toasted, remove from pan and set aside too cool. Once cooled ground in a blender.
In a medium bowl cream butter and sugar for 1 minute with a hand mixer or use a wooden spoon. Then mix in vanilla essence and egg.
In a large bowl using a wooden spoon mix together flour, baking powder, and salt. Combine wet ingredients into the flour etc. Once all the butter is fully coated in flour, fold in the ground macadamia nuts and chocolate chips.
Form cookie dough balls roughly 1-inch/3 cm in size and place on baking tray. Put cookies into oven for 12 - 15 minutes. Until the outer edges look golden.
Remove from oven. Cool for 10 minutes on tray, transfer to cooling rack.
