The secret to a yummy moist muffin recipe is how the structure of the muffin ends up! You want a fluffly, sweet texture but it needs to hold moister, eating a muffin with the right amount of moister makes it tender and it should literally melt in your mouth.

This chocolate chip recipe has a good structure because you cream the room temperature butter and white sugar, it is then mixed together with egg and then the dry flour ingredients are folded through. These steps give you a fluffier muffin texture and a moist muffin!

Tips For Baking Chocolate Chip Muffins:

  • Follow the recipe!!! Cream the butter and sugar and then add the ingredients in the order it lists. This will make your muffins fluffy and moist!

  • You can substitiue milk chocolate chips for either dark chocolate or white chocolate.

  • This is a great muffin base recipe, so you could use it to make raspberry white chocolate muffins, lemon muffins or whatever your heart desires!!

This easy choc chip muffin recipe is one of the simplest recipes! Using basic pantry ingredients and chocolate chips you can put together a delicious treat for family and friends!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 2 eggs, whisked
  • 1 teaspoon vanilla essence
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 1/4 cup milk, room temperature
  • 1 1/2 cups milk chocolate chips

Instructions

  1. Preheat oven to 355 F fan bake. Lightly grease a 12 x hole muffin tray.
  2. In a large bowl cream butter and sugar until very pale and fluffy, approx. 2 minutes.
  3. Stir in eggs with a rubber spatula or wooden spoon, the mixture will split. Stir in the vanilla essence.
  4. Dump flour, baking powder, & salt on top of the wet egg and butter mixture. Gently stir the dry ingredients a little and then fold into the wet mixture underneath, the texture will be very dry and chunky.
  5. Add milk and stir/fold until just combined. Sprinkle in chocolate chips, fold into the muffin batter gently.
  6. Spoon equal amounts of the batter into the muffin tray. Place in oven for approx. 20- 25 minutes or until cooked.
  7. Remove from oven. Move muffins to a cooling rack after 5 minutes.
  8. Serve warm!
