The muffins are moist, fluffy and have a little extra body to soak up the yummy blueberry juices. These muffins also create that beautiful caramalised crusty on top. Perfect!

This is the yummiest blueberry muffin recipe ever! These blueberry muffins are the classic kind using fresh blueberries and a delicious muffin batter created specifically for fresh blueberries.

Ingredients

  • 1/2 cup softened butter
  • 1/2 cup soft brown sugar, firmly packed
  • 2 eggs, whisked
  • 1 teaspoon vanilla essence
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup milk
  • 1 cup fresh blueberries + 1/4 cup for garnish

Instructions

  1. Preheat oven to 355 F fan bake. Lightly grease a non-stick muffin pan.
  2. In a large bowl cream butter and sugar for 30 - 60 seconds or until pale and fluffy. Fold in eggs, the mixture will split. Stir in vanilla essence.
  3. On top of the butter sugar mixture, add flour, baking powder, baking soda, & salt. Stir the dry ingredients on top before folding into the wet ingredients. The texture will be quite dry and lumpy.
  4. Pour milk into the muffin batter, stir until just combined (don’t over mix). Fold the fresh blueberries into the muffin batter.
  5. Spoon equal amounts into your muffin pan, add extra blueberries to the top of the muffins. Place muffin pan in the oven for approximately 18 minutes or until a skewer comes out clean.
  6. Cool blueberry muffins in the pan for 5 - 10 minutes, remove blueberry muffins on to a cooling rack.
  7. Enjoy! x
