Gluten Free Pecan Chocolate Chip Cookies

This glorious Pecan Chocolate Chip Cookie recipe is gluten free!

If your not inclined to gluten free WHO CARES because this recipe is so good you won’t care that it’s missing all the gluten!

We literally go through a whole batch in a day.

Gluten Free Pecan Chocolate Chip Cookies

  • 2 cups almond flour

  • 1/4 teaspoon baking soda

  • Pinch of salt

  • 100 grams butter

  • 1/2 cup caster sugar

  • 1 teaspoon vanilla essence

  • 1 egg

  • 1 cup milk chocolate chips

  • 2 tablespoons chopped pecans

Directions

  1. Preheat oven to 160 degrees C / 320 degrees F fan bake.

  2. In a large bowl combine flour, baking soda, and salt together.

  3. In a separate medium size bowl cream the butter, sugar, and vanilla extract for 1 - 2 minutes. Whisk in the egg.

  4. Add wet ingredients to dry ingredients and stir until just combined. Then fold in chocolate chips.

  5. Line a baking tray with baking paper. Using a ice cream serve, portion up the cookie dough.

  6. Place a couple of the chopped pecans into the top & center of each cookie.

  7. Bake for 12 - 14 minutes depending on your oven or until cracking and golden on top.

  8. Leave on baking tray for 15 minutes and then transfer to cooling rack.

So bloody good! x
