Lemon Blueberry Rolls with Lemon Cream Cheese Frosting

I don’t know if I have ever been so excited for a scroll recipe! These Lemon Blueberry Scrolls with Lemon Cream Cheese Frosting are the ultimate delicious, zesty, creamy, jammy dessert, afternoon tea or breakfast (haha I actually eat these for breakie!)!

The scroll is fluffy but strong enough to absorb all the lemon blueberry jam that is created in the beautiful layers and the extremely decadent blueberry caramel that is created all over the bottom of these scrolls. Then to top it off we have this fresh, tangy & rich lemon cream cheese frosting!

I store the scrolls in the fridge because of the cream cheese, so just give them 30 secs in the microwave to warm them through. So good I think I might throw a batch together later today!

Tips for the best lemon rolls:

  • When checking the yeast and milk, it doesn’t need to be extremely bubbly. Micro bubbles are fine but if you see no action at all, check your yeast expiry date & start again.

  • Don’t skimp on the lemon zest.

  • When rolling the dough log you may have some runaway blueberries. Don’t worry about it.

  • If the lemon cream cheese frosting looks a little think or thick add either more powdered sugar or lemon juice.

Ingredients

Lemon Rolls
  • 1/2 cup milk, warm
  • 1 1/2 teaspoons active yeast
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • Zest of 1 lemon
  • 1/2 cup /butter, softened
  • 1/4 cup warm water, if required
Lemon Blueberry Filling
  • 1/2 cup butter, softened
  • 3/4 cup soft brown sugar
  • 2 cups fresh blueberries
  • Zest of 1 lemon
Lemon Cream Cheese Frosting
  • Juice of 1 - 2 lemons
  • 8 oz cream cheese room temperature
  • 3 tablespoons powdered sugar

Instructions

Lemon Rolls
  1. In a medium bowl or stand mixer mix milk, yeast, & sugar. Set aside for 5 - 10 minutes or until there are bubbles & frothing.
  2. Add flour, zest, & butter. Combine all the ingredients by hand or using your stand mixer. Add water if the dough is a bit dry (if the dough doesn’t come together with a little kneading). Once you have a dough ball knead by hand or with your mixer on low for approximately 5 minutes.
  3. Place dough ball in a oiled large bowl, cover with cling film & a tea towel for 1.5 hours or until the dough has risen.
Filling and Cooking
  1. Preheat oven to 355 F. Line a large baking dish with parchment paper.
  2. Roll dough out between two sheets of parchment paper till its 1/2 inch thick, and a large rectangle in shape.
  3. Remove top sheet. Spread with butter. Sprinkle sugar, blueberries, & lemon zest.
  4. Using your fingers, carefully roll the dough & filling length ways (it should look like a long log once rolled). Cut log into 2-inch slices.
  5. Place all the slices cut side down in the baking dish. Cover with a tea towel & leave to rise for 10 minutes.
  6. Place in the oven for 25 - 35 minutes, (varies by oven). Cover with tin foil if the top starts burning.
  7. Remove from oven when golden and bread is fluffy when pulled apart.
  8. Cool scrolls for 10 minutes in baking dish, there will be lots of blueberry caramel in the bottom which will stick better if cooled first.
Lemon Cream Cheese Frosting
  1. In a medium bowl mix lemon juice, cream cheese, & sugar. Combine till there are no visible lumps.
  2. Once scrolls have cooled to your liking, spread a generous amount of lemon cream cheese frosting all over the top of the scrolls.
  3. Serve warm!
