Lemon Blueberry Rolls with Lemon Cream Cheese Frosting
I don’t know if I have ever been so excited for a scroll recipe! These Lemon Blueberry Scrolls with Lemon Cream Cheese Frosting are the ultimate delicious, zesty, creamy, jammy dessert, afternoon tea or breakfast (haha I actually eat these for breakie!)!
The scroll is fluffy but strong enough to absorb all the lemon blueberry jam that is created in the beautiful layers and the extremely decadent blueberry caramel that is created all over the bottom of these scrolls. Then to top it off we have this fresh, tangy & rich lemon cream cheese frosting!
I store the scrolls in the fridge because of the cream cheese, so just give them 30 secs in the microwave to warm them through. So good I think I might throw a batch together later today!
Tips for the best lemon rolls:
When checking the yeast and milk, it doesn’t need to be extremely bubbly. Micro bubbles are fine but if you see no action at all, check your yeast expiry date & start again.
Don’t skimp on the lemon zest.
When rolling the dough log you may have some runaway blueberries. Don’t worry about it.
If the lemon cream cheese frosting looks a little think or thick add either more powdered sugar or lemon juice.
