No Bake Strawberry Cheesecake

This incredibly creamy velvety rich no bake strawberry cheesecake should be on the menu if you have some fresh strawberries in the kitchen!

My family absolutely devours this cake, it’s such an elegant flavor combination that kids to adults love it.

This is the perfect make-ahead dessert you can easily put together. Firstly, there’s no baking (hello time saver)! Secondly, you start setting the base in the freezer while you get the rest of it all rustled together and last but not least, you don’t need to cook the strawberry sauce! 

What is a no bake strawberry cheesecake?

A no bake strawberry cheesecake is a chilled dessert with a biscuit base, a strawberry cheesecake filling. Typically made from whipped cream, cream cheese, condensed milk, sugar, and strawberries.

There are many different types of recipes that can even include gelatin and jello. While some recipes also incorporate the strawberries in different ways from folding in fresh strawberry pieces, pureeing strawberries and then mixing it with the cheesecake, or making a strawberries sauce to drizzle on top.

What is in a no bake strawberry cheesecake?

This is a very simple dessert has three parts to it:

Biscuit base

  • Graham crackers or digestive biscuits - Typically graham crackers are used which is easy to get if you’re in the US but otherwise digestive biscuits can be substituted, they are more readily available in the UK, Australia, and New Zealand.

  • Melted butter - This binds all the biscuit crumbs together and then when chilled makes the cheesecake base solid.

Strawberry cheesecake filling

  • Cream cheese - The base ingredient for all cheesecakes, I prefer to use the Philadelphia cream cheese brand.

  • Condensed milk - Gives a rich velvetyness and helps create a firmer cheesecake when chilled.

  • White sugar - To sweeten the cheesecake.

  • Lemon juice - This is a must ingredient, it helps balance the richness of all the cream ingredients.

  • Cream - Makes your no bake cheesecake airy and light.

  • Fresh strawberries - The winning ingredient to make it strawberry flavor.

Strawberry sauce

  • Fresh strawberries - Adds an extra punch of fresh strawberry flavor.

  • Water - Thins the pureed strawberries out a little to make it spread nicely over your dessert.

Making a no bake strawberry cheesecake

Mixing together the ultra-indulgent cheesecake filling with slightly tart strawberries balances this chilled dessert nicely.

I use less melted butter in the base for a more crumbly effect, however, you can just add a little more melted butter if you prefer your cheesecake base to be more solid.

I like my cheesecakes to have the base come up the sides like a pie, to do this I use a combination of fingers and a flat bottom ramekin with a 90-degree angle between the base and the sides. There’s a video on social media that I will try to get loaded here so you can see how I do it.

Incredibly creamy no bake strawberry cheesecake using condensed milk!

Ingredients

Base
  • 2 cups graham crackers/sweet biscuit crumbs
  • 1/4 cup + 3 tablespoons melted butter
No Bake Strawberry Cheesecake Filling
  • 2 cups cream cheese, room temperature
  • 2/3 cup condensed milk
  • 1/3 cup white sugar
  • 1 1/2 tablespoons fresh lemon juice
  • 1 cup heavy cream, chilled & whipped
  • 1/2 cup strawberries, finely chopped
Strawberry Sauce
  • 1 cup fresh strawberries
  • 1/3 cup water

Instructions

Base
  1. Line a 9-inch spring form cake tin with parchment paper. Put aside.
  2. In a bowl mix together the biscuit crumbs and ¼ cup melted butter. Stir and add the rest of the melted butter slowly until the mixture can only just hold together. Texture will still be crumbly.
  3. Pour into your prepared tin, press out and up the sides using your fingers and a flat bottom ramekin.
  4. Place in the freezer while you mix the cheesecake filling.
No Bake Strawberry Cheesecake Filling
  1. In a large mixing bowl, add the cream cheese. Stir until smooth.
  2. Add the condensed milk, white sugar, and lemon juice. Mix together with a spoon or spatula until combined.
  3. Beat the cream cheese mixture with an electric whisk on high for 2 minutes, should be smooth and glossy.
  4. Dollop your whipped cream into the cream cheese mixture bowl. Gently fold together with a spatula,until half incorporated. Sprinkle chopped strawberries, then finish gently folding together until fully incorporated.
  5. Remove the cheesecake base from the freezer. Gently pour/spoon cheesecake onto the base. Smooth the top evenly with spatula.
Strawberry Sauce
  1. In a small bowl blend together strawberries and water. Pour over the top of your cheesecake.
  2. Place in the refrigerator for 5+ hours, ideally overnight will get it the best ‘setting consistency’.
