Plum Curd recipe.

This plum curd recipe is extremely delicious, easy to make, and the perfect balance of sweet & tangy. Perfectly simple to make! I also have a magnificent recipe for Fresh Plum Curd. All you need is a blender, pot, whisk & 15 minutes. Pop it into the fridge for a couple of hours. Voila!

Plum curd is super great for layer cakes, tarts, with scones, pancakes, waffles, ice cream and anything else that takes your fancy.

Tips for home made plum curd:

  • Make the plum curd in advance as it needs several hours to chill.

  • Other types of canned plums would be fine to use, just ensure you measure the same quantities.

This plum curd recipe is extremely delicious, easy to make, and the perfect balance of sweet & tangy.

Ingredients

  • 1 can (850 grams) Black Doris plums
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 egg yolks
  • 3 tablespoons white sugar
  • Pinch of salt

Instructions

  1. Drain plums and remove the large pips. Place plums in a blender, blend till smooth.
  2. Add butter, eggs, sugar, and salt to the blender. Blend for 30 seconds - 1 min. The mixture will split which is fine.
  3. Use a medium pot on a medium - high heat. Pour mixture into pot, whisk for 1 minute continuously. Reduce to a medium heat.
  4. Continue cooking and whisking for 5 - 7 minutes until thickened (don’t let it boil).
  5. Transfer curd into a bowl, continue whisking while it’s cooling. Cover & place in fridge for several hours or overnight.
  6. Plum curd will keep 5 - 7 days.
