Strawberry Shortbread Cookies
These Strawberry Shortbread Cookies are so tender, they literally melt in your mouth! How to make shortbread cookies or biscuits (depends where you are in the world) is so easy!
The base of the cookie is always sugar, butter, & flour. I kept this shortbread cookie recipe simple by adding in finely grated strawberries!
You may be wondering why grated, it’s because it gives you the right size swirls & flecks of strawberry. The recipe is not as good if you puree the strawberries because it makes the cookie more of a cake texture & the chunks release too much liquid in big spots.
The red streaks are just to jazz it up, so feel free to not add them if your not into food coloring (totally understand) or just don’t have any on hand!
How To Make The Best Strawberry Shortbread Cookies
Chill the dough even if it’s just for 5 minutes. If you are in a warmer/humid climate go for the 10 minutes but also just judge it for yourself. You will know if the dough is too soft.
I use a grater-zester to grate the strawberries.
