Sweet Potato Goat Cheese Crumble is extremely delicious, succulent but crumbly & the perfect Thanksgiving side dish.

This has all the best parts of a fruit crumble only it’s a savory dish! You have the tender seasoned sweet potatoes, a crumbly crunching topping, lots of salty goat cheese, and that amazing soft sticky layer around the edges created from the crumble topping mixed with the juices of the sweet potato & vegetable stock.

Savory Sweet Potato Crumble Tips:

  • A cast iron skillet will conduct the heat a lot better which will make for a better crumble. Avoid using a glass baking dish.

  • Don’t skip on the vegetable stock, the sweet potatoes need the moisture.

  • Wait till the last 10 - 15 minutes till you add the goats cheese. Otherwise it will turn into rock solid burnt stones. Trust me. I made the mistake for you all.

Ingredients

Savory Sweet Potato Crumble
  • 1 tablespoon extra virgin olive oil
  • 2.2 pounds sweet potatoes
  • 3 sprigs of fresh thyme, finely chopped
  • 1 teaspoon garlic powder
  • Pinch of salt & cracked pepper
  • 1 cup vegetable stock, boiling hot
  • 3/4 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 1/2 cup panko crumbs
  • 2/3 cup crumbly goat cheese
  • 1/4 teaspoon smoked paprika

Instructions

Savory Sweet Potato Crumble
  1. Preheat oven to 355 F degrees fan bake.
  2. Pour olive oil into a 10-inch / 27-cm ovenproof skillet, brush oil all over & up the sides.
  3. Cut sweet potatoes into smallish cubes 1/2-inch x 1/2-inch ideally, if you cut larger cubes increase the cooking time. Place in the skillet.
  4. Season sweet potatoes with salt & pepper. Sprinkle garlic powder & thyme. Stir the potatoes. Pour in vegetable stock.
  5. In a small bowl rub butter into flour until the texture becomes chunky sand with some butter pieces the sizes of almonds.
  6. Mix together with the panko crumbs. Spoon evenly over the potatoes & season with salt & pepper.
  7. Place in your pre-heated oven for 25 minutes. Remove the dish from oven to top with the goat cheese.
  8. Carefully crumble the goat cheese over the top of the sweet potato dish & sprinkle with smoked paprika.
  9. Place sweet potato crumble back in the oven for another 10 - 15 minutes or sweet potatoes are cooked through.
  10. Remove from oven & cool a little before serving.
  11. Enjoy! x
