Thick Tomato White Bean Soup
So satisfyingly warm this Thick Tomato White Bean Soup is a one pot easy go to meal. The white beans make it so thick and creamy without adding any cream (although a little cream would also be delicious!).
The perfect soup for when you want something comforting, rich, & filling. I serve it with sliced & toasted crusty loaf, brushed with EVOO & sprinkled with dried herbs.
Tips:
Get some really golden brown caramelization on the garlic & onions. This is part of how the soup gets a rich & deep flavor.
Deglazing the pan with apple cider vinegar is the other part of getting that amazing flavor.
Creamy White Bean & Tomato Soup
1 tablespoon extra virgin olive oil EVOO
2 garlic cloves diced
1 brown onion diced
Salt & pepper to taste
3 teaspoons vegetable stock powder
3 tablespoons apple cider vinegar
2 cans tomatoes
2 cans white beans
2 teaspoons garlic powder
Fresh sprigs of Thyme
Directions
In a large pot on a medium - high heat, add the EVOO, garlic, & onions, salt, & pepper. Fry for 3 - 5 minutes, until the onions have started some golden color. Stirring regularly with a wooden spoon.
Reduce heat to medium. Add in vegetable stock powder, fry for 1 - 2 minutes. Degalze the pan with the apple cider vinegar, making sure to scrap the caramelized bits off the bottom of the pot.
Pour in tomatoes, white beans, garlic powder, & thyme. Bring to the boil uncovered. Reduce heat, cover, and simmer for 15 - 20 minutes. Stirring occasionally.
Take the soup off the heat. Blend until smooth. Serve piping hot with slices from a toasted crusty loaf.
