Nothing says summer more than tomatoes, am I right? The addition of smoked paprika gives it a great taste, colour, and smells amazing when cooking.

This delicious tomato galette is so easy to make. If your new to the galette life then this is the one for you my friends.

The great thing about galettes is they almost look better ‘ugly’, as in you haven’t done a whole lot of fancy trimming on the pastry etc. This is great paired with a green salad and light vinaigrette.

Tomato & Red Onion Galette

  • 1 1/2 cups plain white flour

  • 150 grams cold butter cubed

  • 1/4 teaspoon salt

  • 1 teaspoon smoked paprika

  • 3 tablespoons chilled water

  • 1/4 cup grated cheddar cheese

  • 2 medium size tomatoes sliced

  • Half red onion sliced

  • Fresh thyme

  • 1 egg

  • Salt & pepper to taste S&P

  • Fresh oregano

Directions

  1. Put flour, salt, paprika, and butter in a food processor. Whizz up until it looks like sand with some bean size lumps of butter still. Add a little of your chilled water and whizz a little till it starts to form a ball.

  2. Pull dough out of the food processor, form more of a dough ball with your hands, adding water as required. Knead dough several times, this will ensure the pastry is strong enough for the filling. Press into a flat 6 inch / 15 cm disk, wrap tightly in cling wrap. Place in fridge for atleast 2 hours or overnight.

  3. Preheat oven to 355 degrees F / 180 degrees C fan bake. Line a baking tray with baking paper.

  4. Roll your pastry out on a slightly floured surface with a lightly floured rolling pin. Transfer to your baking tray. Trim edges of pastry if you want.

  5. Scatter grated cheese & thyme leaves onto pastry, more in the middle than the outer rim. Place tomato slices & red onion on top of the cheese pilling more in the middle than edges (in alternating pattern if you want to get fancy).

  6. Fold outside edge of pastry towards middle pleating as you go, it will form a rough circle. Egg wash the pastry. Sprinkle with S&P all over.

  7. Place in oven and bake for 35 - 40 minutes depending on your oven. Cook when pastry is cooked through & golden.
