This is a super simple flavor packed dip! I really love feta cheese, so I basically find anyway I can to add it to a dish but instead of slipping it in, this recipe is all about the feta cheese! Perfect for a nibbles plate with friends or co-workers.

Great on crackers, with vegetable sticks, fries, or on crusty sourdough toast layered with tomatoes.

Tips:

  • Add cayenne pepper for a little spicy heat but the heat level will develop in the fridge so tread cautiously.

  • You want mild creamy feta for this recipe, not the ultra crumbly salt kind.

  • You do need a blender or food processor for this recipe.

Whipped Feta Spinach Dip

  • 200 grams feta cheese creamy (French is best for less salt & the creamy texture)

  • 1 cup fresh baby spinach

  • 1 cup plain Greek yogurt

  • 2 teaspoons white vinegar

  • 2 cloves garlic chopped

  • 2 tablespoons lemon juice

  • 2 teaspoons grated lemon zest

  • 1 tablespoon chopped fresh garlic chives

  • Sprinkle cracked black pepper

  • Pinch cayenne pepper (optional)

Directions

  1. Chop feta into chunks and place into a blender or food processor.

  2. To the blender add the spinach, yogurt, vinegar, lemon juice & zest, chives, black pepper, and cayenne pepper.

  3. Blend for 1 - 2 minutes or until completely smooth.

  4. Can be eaten straight away but the flavors will develop if stored in a airtight container in the fridge overnight.
