Whipped Feta Spinach Dip
This is a super simple flavor packed dip! I really love feta cheese, so I basically find anyway I can to add it to a dish but instead of slipping it in, this recipe is all about the feta cheese! Perfect for a nibbles plate with friends or co-workers.
Great on crackers, with vegetable sticks, fries, or on crusty sourdough toast layered with tomatoes.
Tips:
Add cayenne pepper for a little spicy heat but the heat level will develop in the fridge so tread cautiously.
You want mild creamy feta for this recipe, not the ultra crumbly salt kind.
You do need a blender or food processor for this recipe.

Whipped Feta Spinach Dip
200 grams feta cheese creamy (French is best for less salt & the creamy texture)
1 cup fresh baby spinach
1 cup plain Greek yogurt
2 teaspoons white vinegar
2 cloves garlic chopped
2 tablespoons lemon juice
2 teaspoons grated lemon zest
1 tablespoon chopped fresh garlic chives
Sprinkle cracked black pepper
Pinch cayenne pepper (optional)
Directions
Chop feta into chunks and place into a blender or food processor.
To the blender add the spinach, yogurt, vinegar, lemon juice & zest, chives, black pepper, and cayenne pepper.
Blend for 1 - 2 minutes or until completely smooth.
Can be eaten straight away but the flavors will develop if stored in a airtight container in the fridge overnight.
