Tips for making hot cross bun pudding:
I personally prefer the traditional spiced fruit hot cross buns for this recipe. But you can use any flavor you’d prefer. Chocolate hot cross buns would be nice.
Let the apple pie custard soak into the hot cross buns. You know when you eat bread & butter pudding and there are bits of dry bread? That’s because the bread hadn’t absorbed the custard mixture before being cooked.
You want to get it all delicious with the caramelization edge parts but you don’t want to burn it, definitely cover with tin foil part way through as the custard mixture is sensitive to heat.
