Making a hot cross bun pudding is thankfully very easy, which we all need after a long weekend of cooking. I have done many testers to get the flavor of apple pie just right while still making sure its a hot cross bun pudding.

Tips for making hot cross bun pudding:

  • I personally prefer the traditional spiced fruit hot cross buns for this recipe. But you can use any flavor you’d prefer. Chocolate hot cross buns would be nice.

  • Let the apple pie custard soak into the hot cross buns. You know when you eat bread & butter pudding and there are bits of dry bread? That’s because the bread hadn’t absorbed the custard mixture before being cooked.

  • You want to get it all delicious with the caramelization edge parts but you don’t want to burn it, definitely cover with tin foil part way through as the custard mixture is sensitive to heat.

Ingredients

Apple Pie Hot Cross Bun Pudding
  • 6 hot cross buns
  • Butter, softened (for the buns and greasing)
  • 1 red apple, peeled & cored, thinly sliced
  • 2 tablespoons mashed banana
  • 2 eggs + 1 egg yolk
  • 3 tablespoons smooth almond butter, optional
  • 1 teaspoon vanilla essence
  • 1/4 cup soft brown sugar, firmly packed
  • 1 cup full cream

Instructions

Apple Pie Hot Cross Bun Pudding
  1. Preheat oven to 355 F fan bake. Grease a 9.5” x 9.5” baking dish.
  2. Sideways cut a hot cross bun into 3 slices. Lightly butter each side of the slice. Place into the baking dish. Repeat for all buns.
  3. Add the sliced apple pieces to the baking pan. Roughly mix and layer the apple with the bun slices. Doesn’t need to be perfect.
  4. Whisk eggs with the mashed banana until fully combined.
  5. Add almond butter, vanilla essence, & brown sugar to the bowl. Whisk. Pour in cream, whisk again until everything is mixed.
  6. Carefully pour into the baking dish over the hot cross buns and apple. Allow to sit on the bench for 5 minutes (this helps the custard soak into the buns).
  7. Place in the oven uncovered for 15 - 20 minutes. Cover with tin foil and bake for another 15 - 30 minutes or until the pudding is set.
  8. Remove from the oven and serve piping hot with ice cream or velvety whipped cream.
