Apple Spiced Profiteroles

 

Looking for something special and seasonal to whip up for your loved ones these holidays? These Apple Spiced Profiteroles are the perfect treat and dessert! Profiteroles or cream puffs, are a simple airy choux pastry filled with velvety whipped cream and apple spiced sauce folded together.

These profiteroles sound and look impressive! The name is deceptively complicated when in reality it is a really easy dessert to make! But no need to tell your loved ones that!

Usually, I make profiteroles (cream puffs) into a more round shape but in the spirit of this season I wanted to make them look a little like Christmas trees. You can do this by piping a circle on your tray (as your base) and then filling the circle (with the same piping bag) in circular moves, slowly building it into a cone shape. Practice makes perfect, my first 10 were duds so just keep trying!

Tips For The Best Apple Spiced Profiteroles:

  • Every oven is different, if you know your oven has a hot spot make sure you turn the trays mid cook etc.

  • You can use any apples you have, I tested this recipe with both green apples and red apples. The green apples give a slightly more tart flavor while red apples had a slightly sweeter flavor.

  • Heavy cream is whipping cream, the name varies by country but basically any cream with enough fat content to whip.

  • Apple spiced filling can be made the night before, store in a airtight container in a refrigerator.

These Apple Spiced Profiteroles are the perfect treat and dessert! Profiteroles or cream puffs, are a simple airy choux pastry filled with velvety whipped cream and apple spiced sauce folded together.

Ingredients

Profiteroles
  • 1 cup water
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • Pinch of salt
  • 4 large eggs, whisked
Apple Spice Filling
  • 2 red apples, peeled and diced
  • 1 cup water
  • 1/2 cup white sugar
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 cinnamon
Assembly
  • 1 cup heavy cream

Instructions

Profiteroles
  1. Preheat oven to 425 F fan bake. Line two baking sheets with parchment paper. Draw 20 - 24 circles on each sheet measuring 1 - 1.5 inch in diameter.
  2. Place a small pot on a medium heat. Add water & butter, bring to the boil. Add flour & salt to the pot, stirring constantly with a wooden spoon. Reduce heat to low.
  3. A dough ball will form with a jelly like texture. Continue stirring dough around the pot by spreading it out over the bottom of the pot & up the sides, scrap the dough to form a ball again. Repeat, cooking dough this way for 2 - 4 minutes, there should be a thin layer of dough that won’t scrap away from the bottom when done.
  4. Transfer dough into a medium size bowl, cool down to a mildly warm temperature.
  5. Using a wooden spoon stir in half the eggs. Keep stirring until fully incorporated 30 - 60 secs, it will look split initially but will combine. Pour in half of the remaining eggs. Repeat until all eggs are combined & dough looks silky smooth.
  6. Spoon dough into a piping bag with a round nozzle. Pipe dough into the circles you drew earlier.
  7. Place baking trays in the middle of your oven.
  8. Place in the oven for approx. (varies by oven) 20 - 30 minutes, swapping and turning the trays half way (10 minutes) through the cook. Profiteroles are cooked when the outside is golden and the inside is hollow and dry. Remove from oven, set aside to cool.
Apple Spice Filling
  1. Add all ingredients to a small pot with a lid.
  2. Place pot on a medium to high heat, bring to the boil. Reduce heat to a simmer.
  3. Simmer for 10 - 15 minutes, the apple should be cooked through and translucent.
  4. If the liquid has not reduced to a slightly thick sauce, remove the lid and allow to reduce for another 3 - 5 minutes. Remove from heat.
  5. Blend the the spiced apples using a blending stick until the texture is smooth or use a blender. Set aside too cool.
  6. Place in the fridge until you are ready to pipe the profiteroles.
Assembly
  1. Once all the profiteroles are cooled down, whip the cream until there are stiff peaks.
  2. If you want to fill the profiteroles without cutting them open; spoon whipped cream into a piping bag, spoon apple spice into a separate pipping bag, cut a small hole in the bottom of a profiterole, fill with both the cream & the apple spiced filling. Repeat.
  3. If you are happy to cut the profiteroles open then; cut a profiterole open, spoon cream and apple spiced filling. Repeat.
  4. Enjoy!
