Now I don’t want to say these chocolate pumpkin brownies are healthy but they do include 1 whole cup of pumpkin puree AND uses dark chocolate instead of milk chocolate. So they definitly are on the healthier side compared to your typical chocolate brownie recipe.

Ingredients

Chocolate Pumpkin Brownies
  • 1/4 cup butter, softened
  • 1 cup dark chocolate melts
  • 1/2 cup white sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla essence
  • 1 cup pumpkin puree
  • 1/4 cup cocoa powder
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat oven to 355 F fan bake. Line a 9.5” x 9.5” brownie pan.
  2. In the microwave melt butter and chocolate together, stop and stir every 10 - 15 secs until completely melted. Set aside.
  3. In a large bowl whisk sugar and eggs for 2 - 3 minutes with an electric whisk or 4 - 5 minutes by hand. Should look pale and the volume should have at least doubled.
  4. Slowly add the melted chocolate into the sugar/egg mixture, whisking as you go.
  5. Using a rubber spatula or wooden spoon, fold in the vanilla essence and pumpkin puree.
  6. Then fold in the cocoa powder and flour until just combined.
  7. Place in the oven for approximately 20 minutes, there should be some jiggle in the middle. Remove from the oven.
  8. Leave brownie in pan for 30 minutes. Important: The brownie needs to set in the pan for another 30 minutes outside of the oven. If you don’t do this step it will fall part when you try to remove it from the pan.
  9. Serve warm, so delicious!!!
