I am a huge fan of nuts in chocolate, I live and breath fruit & berries chocolate. The idea of adding cereal to chocolate bark is based around how much I love Kellog’s Crunchy Nut cereal!

This is actually a Australian cereal but you can buy it on Amazon, I’ve made a link but it’s not to the actual Kellog’s store because they aren’t stocking it (Kellog’s if you are reading this; you need to put Crunchy Nut on your store!).

I love making chocolate bark because it’s a no fuss treat, the only ”cooking” is melting the dark chocolate in the microwave.

Want to know how to melt chocolate? First purchase chocolate melts they are made from cocoa butter which can be melted and firmed up multiple times (chocolate chips they are designed to not melt easily as they can with stand higher temperatures).

  1. Place chocolate in a microwave proof bowl.

  2. Using a medium power, microwave for 20 - 30 seconds, stir.

  3. Repeat steps until the chocolate is completely melted.

Tips for making Dark Chocolate Almond Bark

  • Using chocolate melts because they are made from cocoa butter, this means the chocolate can melt and firms up multiple times.

  • Use a metal baking tray/pan if possible and definitely use parchment/baking paper.

  • Add everything and anything you want!

Ingredients

Dark Chocolate Almond Bark with Cereal
  • 2 cups dark chocolate melts
  • 1 cup cereal or Kellogs Crunchy Nut corn flakes
  • 2/3 cup toasted unsalted almonds
  • Pinch of sea salt

Instructions

Dark Chocolate Almond Bark with Cereal
  1. Line a large metal baking tray with parchment paper.
  2. Roughly chop the almonds, there should be large chunks and very small powdery pieces. Set aside.
  3. In a microwave safe bowl, melt dark chocolate in the microwave. Place the bowl full of chocolate in the microwave on a medium heat for 20 - 30 seconds. Stir thoroughly. Repeat these steps until the chocolate has melted.
  4. Add 3/4’s of the almonds to the melted chocolate. Stir until combined.
  5. Pour the chocolate mixture all over the baking tray. Smooth out with a rubber spatula or the back of a large spoon.
  6. Sprinkle the cereal all over the chocolate. Using the palm of your hand, press the cornflakes into the chocolate a little. Sprinkle with the rest of the almonds.
  7. Place the whole baking tray in the fridge for 1 hour or until the chocolate has set hard.
  8. Break apart with your hands or a large knife. Enjoy!
