How to make strawberry pancakes is easy when using this recipe! They are light and fluffy with scrumptious bursts of sweet strawberries, that’s what the strawberry preserve adds.

What is strawberry preserve? It’s a chunkier, less sugary version of strawberry jam, which is perfect in a pancake mixture.

Strawberry jam is very thin so it just disintegrates into the pancake and it’s not the same experience.

How To Make Strawberry Pancakes:

  • Do not over mix the pancake batter, this recipe uses baking soda which is activated by the yogurt which creates this extra fluffy pancake stack.

  • Cook the pancakes low and slow, otherwise they will burn on the outside and not cook on the inside. I start with a skillet pan on a medium heat but I reduce it to low, perfection.

  • You could substitute the strawberry preserve for strawberry jam, in this recipe I use the Bonne Maman Strawberry Preserves but anything jammy will do.

  • Crème fraiche is too tangy by itself. You have been warned.

Ingredients

Strawberry Pancakes
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • Pinch of salt
  • 2 tablespoons white sugar
  • 1 cup full fat milk, + 1/4 cup milk if needed
  • 3/4 cup berry yogurt
  • 2 large eggs, whisked
  • 4 tablespoons strawberry preserve
  • 1 tablespoon light olive oil
Crème Fraiche Strawberry Sauce
  • 1 cup creme fraiche
  • 4 tablespoons strawberry preserve

Instructions

Strawberry Pancakes
  1. In a large bowl add flour, baking soda, salt, & white sugar. Stir. Make a well in the middle of the dry ingredients.
  2. Pour in milk, yogurt, eggs, and strawberry preserve into the well. Stir the wet ingredients in the well with a fork. Combine all together with a large spoon. The texture will be thicker/chunkier than standard pancake mix. If it looks a little dry add an extra 1/4 cup milk (this can happen if the eggs are small etc).
  3. Place a large skillet pan on a medium heat, add oil. Once the pan is very hot, reduce to low.
  4. Add pancake mix to the pan in 2 tablespoon portions, flatten pancake mixture with the back of your spoon in a circular shape.
  5. Flip once there are bubbling holes in the top of the pancake, approx. 2 - 3 minutes. Cook for another 1 - 2 minutes on the other side . Remove from the pan. Repeat for the rest of the pancake mixture.
Crème Fraiche Strawberry Sauce
  1. In a serving bowl or jug add crème fraiche and strawberry conserve.
  2. Stir until combined.
