This cake is perfect for a morning or afternoon tea! Or at our place we serve it with a spoon of warm caramel sauce & scoop of vanilla ice cream!

Now normally I have some tips for you guys but this cake really is so simple & cooked in 25 minutes!

The classic flavors of English breakfast tea mixed together with delicious chocolate make this mouth-watering cake!

Ingredients

English Breakfast Tea Cake with Chocolate Chunks
  • 1/2 cup boiling water
  • 2 English Breakfast tea bags
  • 3/4 cup butter, softened
  • 1 cup soft brown sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 cup (140 grams) dark baking chocolate, roughly chopped

Instructions

English Breakfast Tea Cake with Chocolate Chunks
  1. In a small bowl pour boiling water over tea bags. Leave to steep for 5 - 10 minutes, then strain tea bags. Set aside to cool.
  2. Preheat oven to 355 F fan bake. Grease & line a 9.5” x 9.5” (24 x 24 cm) pan.
  3. Cream butter and sugar for 30 - 60 seconds. Mix vanilla essence & eggs into the mixture, it will split but it’s fine.
  4. In a separate large bowl combine flour, baking powder, baking soda, and salt. Use a rubber spatula to combine the wet ingredients into the dry ingredients. Add the tea, mix until fully combined.
  5. Fold chocolate chunks into the cake mixture. Pour cake batter into baking pan.
  6. Place in the oven for approximately 25 minutes, remove once cooked & golden.
  7. Leave to cool in pan. Remove & slice into squares.
  8. Enjoy! x
