If your looking for a healthier alternative to a fried donut then look no further, these Lemon Glazed Greek Yogurt Donuts are fluffy but moist and have a slightly crispy outside! I’ll be honest baking them is not exactly the same but it’s a hell of a lot easier & healthier!

I went through many batches to really get the right texture and flavor. They get gobbled up really quick at our place, mainly by my annoyingly thin husband.

I love Greek yogurt!!! Greek yogurt gives these donuts a delicious tangy flavor & offset the sugar in the donut and icing perfectly!!

Tips:

  • Stick to them measurements given for baking soda etc. I have tested more and less, this is the perfect amount. You definitely donut (get it??) need baking powder.

  • Don’t over fill the donut holes, this batter is going to expand a lot.

  • Use a non-stick donut hole baking tray.

Lemon Glazed Greek Yogurt Donuts are fluffy but moist and have a slightly crispy outside!

Ingredients

Greek Yogurt Donuts
  • 1 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1/4 cup / 50 grams butter, softened
  • 1/2 cup white sugar
  • 1/2 teaspoon vanilla essence
  • 1 egg
  • 1 1/4 cups natural Greek yogurt
  • 1/2 cup milk
Lemon Glaze
  • 4 tablespoons powdered sugar
  • 1 lemon juiced

Instructions

  1. Preheat oven to 355 F fan bake. Use 2 x 6-donut hole baking trays (non-stick).
  2. In a large bowl mix together flour, baking soda, & salt using a rubber spatula or wooden spoon. Set aside.
  3. In a medium bowl cream butter & sugar for 60 seconds, texture will be quite grainy. Add vanilla essence & egg, mix together.
  4. Using the spatula/wooden spoon, stir/fold the Greek yogurt and milk into the wet ingredients.
  5. Pour wet ingredients into the dry ingredients. Stirring until fully combined. The batter will start to expand/fluff because of the yogurt & baking soda.
  6. Spoon mixture into the donut holes, careful to not overfill as the donut will rise a lot in the oven & you will lose the hole.
  7. Place in the oven for approximately 20 minutes, cooked when golden & tooth pick comes out clean.
  8. Remove from oven, leave in baking trays for 10 minutes then transfer to cooling rack.
  9. While donuts are cooling, mix together powdered sugar and lemon juice. Add a little more powdered sugar if the glaze is too thin.
  10. Drizzle over donuts & serve!
