Radish & Blue Cheese Galette

This galette is for the adults! Although it tastes so good you could probably get the blue cheese past your kids!

Super savory + delicious! I find these types of dinners really easy with a side salad. Also the house smells incredible when they are in the oven.

The pastry is on the savory side with apple cider vinegar & extra kneading. The extra kneading is great for making the pastry slightly stronger, which I think you need with fillings that have a higher water content (vegetables and fruits). I do this for all my galettes!

Tip: Do not be shy with the egg wash, that’s what gives the pastry that scrummy golden appearance and make sure you get it into all the creases.

Radish & Blue Cheese Galette

1 1/2 cups plain white flour

150 grams chilled salted butter cubed

1/4 teaspoon salt

2 tablespoons apple cider vinegar

2 tablespoons chilled water

2 tablespoons bread crumbs

4 radishes sliced

1 yellow thinly sliced

2 cloves garlic chopped

75 grams blue cheese

1 egg

Salt & pepper to taste S&P

Directions

  1. Put flour, butter, and salt in a food processor. Whizz up until it looks like fine sand with some pea size lumps of butter. Add all the apple cider vinegar and a little chilled water to the food processor, whizz up till the sand starts to form a ball. If the ball doesn’t form continue adding water until it does.

  2. Pull dough out of the food processor, press the dough ball with your hands, adding water as required. Knead for 30 seconds. Press into a flat 6 inch / 15 cm disk, wrap tightly in cling wrap. Place in fridge for minimum 2 hours or overnight.

  3. Preheat oven to 355 degrees F / 180 degrees C fan bake. Line a baking tray with baking paper.

  4. Roll your pastry out on a slightly floured surface with a lightly floured rolling pin. Transfer to your baking tray. Trim edges of pastry for a tidier finish. I sometimes do if I can be bothered.

  5. Sprinkle bread crumbs onto the pastry, focusing on the middle. Place radish & capsicum slices on top of the bread crumbs, in whatever pattern feels right for you! Overlapping is good too.

  6. Crumble the blue cheese with your fingers and scatter over your vegetables. Top with garlic.

  7. On one side fold outside edge of pastry towards middle pleating as you go, it will form a rough circle. Egg wash the pastry. Sprinkle with S&P.

  8. Place in oven and bake for 35 - 40 minutes depending on your oven. Cooked when pastry is cooked through & golden!
