These taste so damn good, I was a little surprised I hadn’t eaten them before! Any homemade scroll recipe needs to have a good dough base, I like to add a little more butter than normal in this recipe to get it really tender which works perfectly with the coffee & maple peanut butter brown sugar filling.

Tips For Making The Best Scrolls:

  • Let that dough rise! I’m impatient so I don’t like to wait too long either but even I have to admit that the scroll dough needs a little rising time.

  • You don’t need to go out and get specialty peanut butter, it is nice to have in the scrolls but not a necessity. So just chuck in whatever you have on hand!

  • Serve warm, there is so much caramelisation that it becomes to stiff to eat cold.

This delicious easy scroll recipe is a twist on the classic cinnamon scroll. Using a combination of coffee flavored peanut butter and brown sugar!

Ingredients

Scrolls
  • 1/2 cup milk warm
  • 1 packet active yeast
  • 1/4 cup white sugar
  • 2 1/4 cups all-purpose flour
  • Pinch of salt
  • 2/3 cup butter, softened
  • Cream cheese for assembly

Instructions

Scrolls
  1. In a medium bowl or stand mixer mix milk, yeast, & sugar. Set aside for 5 minutes or until there are bubbles & frothing.
  2. Add flour, salt, & butter. Combine all the ingredients by hand or using your stand mixer. Once you have a dough ball knead by hand or with your mixer on low for approximately 5 minutes.
  3. Place dough ball in a large bowl, cover with a tea towel for over 1 - 1.5 hours.
Peanut Butter Brown Sugar Filling and Assembly
  1. Preheat oven to 355 F fan bake. Line a large baking dish with parchment paper.
  2. Roll dough out between two sheets of parchment paper in the shape of a large rectangle till its a little less than 1/2-inch thick.
  3. Remove top sheet. Spread with butter, then peanut butter. Sprinkle brown sugar.
  4. Carefully roll the dough & filling length ways into a log. Cut log into 1.5-inch slices.
  5. Place all the slices cut side down in the baking dish. Cover with a tea towel & leave to rise for 25 minutes.
  6. Place in the oven for approximately 25 - 35 minutes. Cover with tin foil if the top starts burning.
  7. Remove from oven when golden and bread is fluffy when pulled apart.
  8. Cool scrolls for 10 minutes in baking dish.
  9. Serve warm with a delicious cream cheese spread.
