Pie lovers this easy Key Lime Pie is for you! Aren’t we all pie lovers though?!? Fresh, decadent, easy, and the most amazing lime dessert I have ever eaten!

Do you have a real love affair with citrus desserts? Me too! I think the balance between the sweetness and sour is like a magical unicorn dessert in my mouth.

Citrus can really brighten up any ol’ dessert or meal, I use lemons (and limes if they aren’t horrifically expensive) daily.

This key lime pie is so insanely easy to make! Even though it’s 3 whole layers I really wanted to make it as easy as possible, for you and for me!

This beauty of a pie can be made with the exquisite Key Lime or any lime you can find! Now graham cracker crumbs are great but you can honestly use any sweet wheat biscuit, an alternative is the McVitie’s Digestive Biscuits.

How to Cook The Best Key Lime Pie:

  • Any type of lime will do! The harder thicker skinned ones are better for getting the zest.

  • When juicing the limes, use a hand juicer or if you don’t have one (I don’t), you can use a teaspoon or I used the round end of a kitchen brush!

  • The baked lime layer should go into a warm - hot pie crust.

  • This type of lime pie is at it’s best when chilled for both taste and pie texture!

Fresh, decadent, easy Key Lime Pie recipe, this makes the most amazing lime dessert I have ever!

Ingredients

Pie Crust
  • 2 cups graham cracker/sweet wheat biscuit crumbs
  • 1 - 2 tablespoons melted butter
Baked Lime Layer
  • 3 eggs, room temperature
  • 2 cups condensed milk
  • 1/3 cup sour cream, room temperature
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • 1/2 cup fresh lime juice
  • 1/2 tablespoon finely grated lime zest
Chilled Lime Creamy Layer
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime, finely grated
  • 2 tablespoons powdered sugar
  • 1 1/2 cups heavy cream

Instructions

Pie Crust
  1. Preheat oven to 355 F fan bake. Grease a large pie dish.
  2. In a bowl add the biscuit crumbs and butter. Mix together using a spoon. Spoon into the greased pie dish. Press the crumbs firmly into the bottom of the pie dish and up the sides.
  3. Place in the oven for 5 minutes. Remove from oven and set aside.
Baked Lime Layer
  1. In a large bowl whisk eggs. Then whisk in condensed milk & sour cream.
  2. Add in flour, salt, lime juice, and zest. Mix until fully combined. Pour into the pie crust.
  3. Place dish back in the oven for 15 - 20 minutes. Remove from oven when the baked layer is set with a bit of a wobble but not sloppy in the center.
  4. Once the dish has cooled, place in the refrigerator for approximately 4 hours or until fully chilled.
Chilled Lime Creamy Layer
  1. In a large bowl mix lime juice, zest, & powdered sugar. Add cream, whip till you have stiff peaks.
  2. Spread over the top of your baked lime pie layer. Garnish with some extra lime zest! Voila!
