A sensational twist on a chocolate pie, with the perfect balance of toasted macadamia nuts, sweet dark chocolate, and sea salt.

Ingredients

Pie Crust
  • 2 - 2 1/2 cups graham cracker crumbs / sweet biscuits crumbs
  • 2 - 4 tablespoons melted butter
Chocolate Macadamia Nut Filling
  • 1/2 cup macadamia nuts, roughly chopped
  • 3/4 cup cream cheese
  • 1/2 cup caster sugar
  • 1/4 teaspoon crushed sea salt
  • 2 1/3 cups dark chocolate melts
  • 1/4 cup butter

Instructions

Pie Crust
  1. Preheat oven to 355 F fan bake. Grease a approximately 9 inch pie dish.
  2. In a bowl add the crumbs and 2 tablespoons of the melted butter. Combine. Continue adding butter until the crumbs are sticking together enough to press into the pie dish (texture of almost wet sand).
  3. Press crumbs into pie dish with finger tips. Then use anything with a small flat bottom (small water glass, measuring cup).
  4. Press in the pie crease (where the bottom of the dish & sides meet), so the pie crust is even all over.
  5. Place in oven for 5 - 10 minutes.
  6. Remove and set aside.
Chocolate Macadamia Nut Filling
  1. Place a medium sauce pan on a low - medium heat. Add macadamia nuts and toast, 2 - 4 minutes, stirring so it doesn’t burn.
  2. Once macadamia nuts are toasted, reduce heat to low. Add cream cheese, stirring while the cream cheese softens down (approx. 1 minute). Stir in sugar & salt, cook for 1 - 2 minutes.
  3. Add chocolate & butter to the pot, at this point continuously gently stir. About 2 - 3 minutes after the chocolate melts the filling will come together, texture like loose jelly.
  4. Pour pie filling into the crust. Set aside to completely cool.
  5. Set the pie in the refrigerator for 5 hours or overnight is best.
