How To Make A Grilled Peach Salad:

  • Use ripe peaches, don’t use under ripe.

  • You do not need to remove the peach skins.

  • You can substitute the goats cheese for a feta cheese. The salty and creamy flavor enhances the salad.

  • You want to use prosciutto crudo not cotto.

This sensational Grilled Peach Prosciutto Goats Cheese salad is easy to make and a real show stopper

Ingredients

  • 3 - 4 ripe peaches cut into small segments
  • 1 teaspoon extra virgin olive oil EVOO
  • 5 - 7 / 70 grams slices prosciutto crudo
  • Large handful micro greens or arugula
  • 1/4 cup goats cheese crumbled
  • 3 tablespoons fresh chives chopped
  • Juice of 1 lemon
  • 1 tablespoon extra virgin olive oil EVOO
  • Crushed sea salt & cracked pepper to taste S&P

Instructions

  1. Place a fry pan on a medium to high heat. Drizzle a teaspoon of EVOO.
  2. Add the peach segments to the pan, single layer. Grill on each side for 2 - 4 minutes, until golden and slightly caramelized. Remove from pan. Set aside.
  3. Roughly shred the prosciutto into small strips with your fingers. Set aside.
  4. On a medium serving plate add your micro greens or arugula, then layer peach segments & prosciutto stripes on top.
  5. Sprinkle with the goats cheese and chives.
  6. Drizzle the lemon juice and EVOO all over the salad. Season with S&P to taste. Give a little toss (don’t over toss it).
  7. Serve straight away!
