Baked Blueberry Donuts with Blueberry Glaze

Every time I bake these blueberry donuts they disappear in 2 minutes flat! These donuts are fresh, fluffy, moist, and so fruity! Delicious fresh blueberries are used for this easy baked blueberry donut recipe and a simple blueberry glaze!

If you have ever wondered how to make easy baked blueberry donuts at home then this is the perfect recipe for you. I personally like baking donuts, it’s a lot healthier and easier than frying donuts. I don’t know about you but recipes that are too time consuming and fiddly are not my cup of tea. Bring on easy and quick donuts!

Tips for the best blueberry donuts and blueberry glaze

  • You do need a donut pan for these baked donuts! You can find them at most home stores for pretty cheap or there are plenty online. I use a Wilton non-stick pan because I prefer the non-stick but honestly any type will do!

  • Use fresh blueberries, the water content in frozen blueberries will not work well with the donut batter.

  • The batter is very thick, I developed it this way to soak up the blueberry juices! You can use a teaspoon (what I use) or a pipping bag to fill the donut cavity in the donut baking trays.

Blueberry Donuts & Blueberry Glaze

Makes: 6 - 8 donuts

Ready in: 15 minutes

Blueberry Donuts

  • 1/4 cup / 50 grams butter softened

  • 1/2 cup white sugar

  • 2 teaspoons vanilla bean extract

  • 1 egg room temperature

  • 3/4 cup all-purpose flour

  • 1 teaspoon baking powder

  • Pinch of salt

  • 1/2 cup fresh blueberries

Blueberry Glaze

  • 1/2 cup powdered sugar

  • 3 - 5 teaspoons pureed fresh blueberries

Directions

Blueberry Donuts

  1. Preheat oven to 180 C fan bake. Lightly grease 2 x 6 donut cavity trays.

  2. Whisk butter & sugar for 30 - 60 seconds. Then whisk in vanilla essence, followed by egg until smooth and velvety.

  3. Dump flour, baking powder, & salt onto the top of the wet ingredients. Use a rubber spatula to stir the dry ingredients on top, then fold the dry ingredients into the wet ingredients until you can’t see anymore dry flour. Don’t over mix.

  4. Incorporate the blueberries by folding them in. Fill the donut cavities 3/4 full.

  5. Place in the oven for 8 - 10 minutes. Remove once cooked through & lightly golden.

  6. Cool in trays for 2 minutes, then transfer donuts to a wire rack to completely cool.

Blueberry Glaze

  1. When you are ready to ice the blueberry donuts; mix together powdered sugar & 3 teaspoons blueberries. Stirring until fully incorporated.

  2. Add more blueberries if the glaze is too thick.

Assembly

  1. Once donuts are fully cooled. Dip the blueberry donuts into the blueberry icing, this will make it looks smoother.
