Making this Lemon Tart Slice is a simple and tasty experience with this super easy recipe. This lemon tart slice has a extra scrumptious pastry base which is then layered with a super tasty lemon tart topping.

Ingredients

Pastry Base
  • 1 cup all-purpose flour
  • 1/3 cup almond flour
  • 1/4 cup white sugar
  • Pinch salt
  • 1/2 cup / 100 grams butter, cubed & chilled
Lemon Tart Layer
  • 2 tablespoons corn flour
  • 1/3 cup white sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup lemon juice
  • 1/2 teaspoon vanilla essence
  • 3 eggs, beaten

Instructions

Pastry Base
  1. Preheat oven to 355 F fan bake. Line a 9.5 x 9.5-inch baking pan with parchment paper.
  2. In a large bowl mix flour, almond flour, sugar, & salt.
  3. Rub the chilled butter into the dry ingredients with your finger tips, it should have a sandy texture with a couple of almond sized butter lumps.
  4. Press into the baking tin with your hands.
  5. Place in the oven for 13 - 15 minutes. Remove from oven and set aside.
Lemon Tart Layer
  1. In a medium bowl mix corn flour, sugar, & baking soda. Stir in lemon juice for 1 minute with a spatula or wooden spoon (it will froth/bubble).
  2. Add vanilla essence & eggs. Stir until completely combined. It will be extremely runny.
  3. Pour onto the cooked pastry base, place in the oven for 10 - 15 minutes or until the tart is set.
  4. Remove from oven, set aside to cool. Remove from tin, cut into desired shapes and place in the fridge to store.
