I love stone fruit and peaches is right up there. Out of all the stone fruit I think peaches probably cooks down the best, especially when it’s a cobbler/pie dish. There is so much flesh to use and plus you get rid of that peach fuzz which can be a bit textually polarizing.

You can make this peach cobbler in any type of oven proof baking dish your like, I personally prefer using a skillet pan because it tends to create more caramelization but honestly this dessert tastes so good that it won’t matter what you use!

Tips for making peach cobber:

  • Ripe to overripe peaches are the best for this cobbler.

  • The pastry crumb is just a crumb, so even though you are rubbing the butter in with your finger tips like its a pastry, don’t worry about it warming up to much etc.

  • You don’t absolutely need the almond flour or almond meal but it gives it a more full body taste and texture.

Ingredients

Peach Cobbler Filling
  • 5 large peaches sliced
  • 2 - 3 tablespoons sugar
  • 1 teaspoon vanilla essence
  • Juice from half a lemon
Almond Pastry Crumble
  • 1 cup all-purpose flour
  • 3/4 cup almond flour
  • 1/4 cup white sugar
  • Pinch of salt
  • 1/2 cup / 100 grams butter, chilled + cubed
  • 2 - 3 tablespoons butter (final step for assembly)

Instructions

  1. Preheat oven to 355 F fan bake.
  2. In a medium size oven proof baking dish or skillet, add peach slices, sugar, vanilla essence, & lemon juice. Stir. Set aside.
  3. In a large bowl mix flour, almond flour, sugar, & salt.
  4. Dump the butter into the bowl, rub the butter into the dry ingredients with your fingers until the texture is chunky sand (it’s okay if there is a few extra lumps of butter).
  5. Sprinkle over the peaches.
  6. Add a couple of extra butter cubes on top.
  7. Place in the oven for 30 - 40 minutes until bubbling and the pastry is golden and cooked through. Cover with foil if the top starts to burn.
  8. Remove from oven. Serve hot with a scope of vanilla ice cream.
