I love stone fruit and peaches is right up there. Out of all the stone fruit I think peaches probably cooks down the best, especially when it’s a cobbler/pie dish. There is so much flesh to use and plus you get rid of that peach fuzz which can be a bit textually polarizing.
You can make this peach cobbler in any type of oven proof baking dish your like, I personally prefer using a skillet pan because it tends to create more caramelization but honestly this dessert tastes so good that it won’t matter what you use!

You don’t absolutely need the almond flour or almond meal but it gives it a more full body taste and texture.
